Surrounded by the sea on three sides, Ishikawa Prefecture is blessed with flourishing nature including Noto's Satoyama and Satoumi, a Globally Important Agricultural Heritage Systems site, Mt. Hakusan with its abundant subsoil water, and the fertile Kaga Plain.
Nurtured by this climate, the local products of Ishikawa are unique and diverse; ranging from Kaga Vegetables, Noto Vegetables, fresh seafood from the Sea of Japan like yellowtail and crab, to traditional fermented products like ishiri fish sauce and kaburazushi (salted and fermented fish-stuffed turnip).
Ishikawa has been a hot topic in recent years for its premium food brands, including new locally developed varieties of fruit like Ruby Roman grapes and Kaga Shizuku pears.
