Every step of cooking our yellowtail is lovingly handled by experts: first, they are salted with sea salt, then seared by experienced cooks, and flash-frozen to lock in their flavor. This simple, straightforward preparation lets the natural flavors shine through.
Pieces of fatty yellowtail are salted with sea salt made in the old-fashioned Agehama style in the Noto area, and then each piece is seared by our expert. The tender and fatty cut of the yellowtail with its umami flavors packed inside is complemented by the aroma of the seared surface. This is our signature product.
